Zucchini Bread
I’m not sure about you, but I LOVE Instagram for coming across all sorts of new, innovative food ideas! Over the years I have become quite “simple” in my approach to food and I tend to stick a lot to what I know I love OR more accurately, innovate without any consciousness of ingredients/amounts and so never really have “useful” recipes to share with you.
Thank GOODNESS there is a whole STACK of amazing people in Instagram world who can create these awesome ideas for us 🙂
Today’s recipe comes from Insta-player “foreverfit22”
So simple, so easy and SO healthy!

Ingredients:
1/3 cup uncooked oat bran
1 scoop protein powder (I dare say you could replace this with ground almond meal or coconut flour)
3 egg whites (Personally I would experiment with adding 1 yolk)
1/2 cup shredded zucchini
a pinch of cinnamon
a few drops of Stevia
1 tsp of baking powder
Method:
Pre-heat oven to 350*F (180 degrees celsius) and bake for 30-35 minutes. Top with some almond butter. You can buy this from your local organic/whole foods store, or even your local Woolies/Coles, and of course you can make your own!

This is a fabulous recipe! I served my hot out of the oven (with a little grated parmesan on top when cooking) with a steaming bowl of Thai Pumpkin Soup…..delish!!! Thanks Bridget for such inspiring and healthy ideas!!
