These crackers are not only HIGHLY nutritious, they are also incredibly DELICIOUS!
Gluten free, Grain free, Sugar free and spectacularly high in essential fats, vitamins, minerals, protein and fibre, you will NOT believe they could be tasty and good for you!
Enjoy them, as shown here, for lunch with some extra sources of protein and fibre, or as a snack spread with avocado, cottage cheese, nut butter or dipped in hommus! YUM 🙂
You might like to try nutritional yeast in place of the parmesan to add that extra flavour, depth AND nutrition 🙂 ENJOY! 🙂
1 cup almond meal
2 tblspn sesame seeds
2 tblspn flaxseed meal
1/4 tspn Himalayan salt
1 tspn whole coriander seeds freshly ground
1 tspn whole cumin freshly ground
1 tblspn olive oil
1/2 tspn sesame oil
Olive oil extra
1/4 cup Parmesan cheese finely grated (optional)
Preheat oven to 180 C
Combine dry ingredients in a mixing bowl
In a separate bowl, whisk together egg, olive oil and sesame oil.
Pour into dry ingredients and mix thoroughly until stiff dough is formed
Place dough between 2 sheets of baking paper and roll to an even thickness of about 3mm
Carefully transfer paper and dough onto a baking tray.
Remove top layer of baking paper
Score the flattened dough into small squares or fingers.
Brush with extra oil.
Sprinkle with extra Himalayan salt.
Sprinkle with Parmesan cheese (optional)
Bake for around 15 min or until golden and crispy
Cool on a wire rack, then snap and store.
