I’ve shared the DIVINE Kasey of @myhealthyeatingfitmission with you before, but here she is again with a RIPPER of a recipe for you to try TODAY 🙂
The thing I LOVE about this woman and her recipes/food, is it is SO no fuss!!!
Unfortunately Kasey has a mega challenging daily life with a very chronically ill daughter and spends A LOT of time in and out of hospital and medical appointments. Amongst all this though, she does her best to feed herself and her family the most nourishing food possible.
At times, food and nourishment is the LAST thing on her mind as she juggles her daughters illness and care, her other daughters busy school and social life, as well as being wife, daughter, friend, AWESOME WOMAN….!
BUT, when she can and has a moment, she’s right back into the kitchen whipping up something MEGA nourishing and LOADED with wholesome goodness!
I cannot speak more highly of this lady and how she does life and health and happiness 🙂 We could ALL take a leaf from her book!
So it is with that, that I present to you this most YUMMIO banana bread that is really so, so nourishing AND simples!
In Kasey’s own words:
I don’t use proper measurements. I’m just a pour and mix kinda gal. But roughly…..
3/4 cup coconut flour
3/4 cup almond meal
1 tsp of cinnamon
1/2 tsp baking powder
2 tblsp rice malt ( I’m allergic to honey, but you can use this)
3/4 cup of oats
3 mashed bananas
1 sliced banana to decorate.
I baked it on 180°C for 50mins.
So there you have it!! A no fuss, play-&-experiment-with-to-make-your-own, banana bread! 🙂
Serve fresh out of the oven with organic, grass fed butter; some home-made jam or even cream or ricotta cheese! Mmmmmmmm
Enjoy without guilt and perhaps make a double batch next time to freeze and have on hand ANY TIME 🙂
This would make a SUPER quick and healthy breakky, or any-time nourishing snack 🙂
