Sweet Parsnip and Apple Pancakes
Yet again I have come across another GENIUS creation AND super inspiring healthy life lover, @lornarle on good old INSTAGRAM 🙂
Yes it is a GOLDFIELD of amazing people, ideas, sights, inspiration and YUMMINESS if you are happy to add yet another social media world to your already full “for-reals” world ;p
I personally love it but do keep my time and interaction there to a minimum…. Most mornings or evenings I will skim through the feed, or add some of my own moments of GOODNESS 🙂
And every now and then I come across something that makes me go YUMMMMMMMM! And totally inspires me to want to share it with YOU 🙂
As I am such a K.I.S.S (Keep it SUPER SIMPLE) fan , these days I RARELY put too much time into food prep….Hence, NO RECIPES….
I LOVE the basics, and my body is super happy with that….But I DO remember the days when I was transitioning to this lifestyle and back then I NEEDED all the inspiration I could get…. I needed to learn how to make some of my favourites in healthy ways….And that is why I am always looking for such ideas to pass on to you 🙂
I am not one to spend hours in the kitchen…. (anymore!)
I am much too busy being out in the National Park, working with my VIPs, catching up with friends/family OR watching MKR (hahahaha)

Ingredients:
100g finely grated parsnip
55g blended oats
2 medium eggs (approx 90g)
115g low fat cottage cheese
60g chopped apple
4g agave syrup
1tsp baking powder
1/2tsp vanilla extract
Method:
Blend all the ingredients and fry tablespoons on a skillet. Then, stack with blueberries, walnuts, apple pieces and agave syrup

Personally, I would definitely add natural yoghurt to these babies and perhaps substitute some other “sweet” ingredient for agave, as it’s not something I regularly use or have “in stock”- actually PEANUT BUTTER would go a TREAT me thinks!! NOMNOMNOM 🙂
