Raw Choc Vegan Donuts

This week I’m SO happy to feature another AWESOME Insta account that I follow and who NEVER ceases to make me drool with her creativity and genius and colour! 🙂

Chocolate is a food staple for MANY of us and there is damn good research to suggest that a good dose of chocolate here and there, OR DAILY (!), CAN be down right good for us! ESPECIALLY when it’s THAT time of the month!

“One of my biggest joys is sharing my love and passion for plant based, straight out of the garden goodness with my kids, but they especially love when we get time in the kitchen together to create raw desserts!
To see the fruits of what you have instilled in them is so rewarding and this recipe is just that!
This vegan raw donut recipe was created by my 9 year old daughter and it’s super delicious and even better than the nasty sugar filled version.
I’m so proud of her and I would love to share the recipe with you all. I hope you enjoy them as much as we do!”

Ingredients:

2/3 cup raw macadamias
1/2 cup almond meal
1 cup medjool dates
1/4 cup raw cacao powder
1 tsp vanilla powder

Method:

In a high speed food processor blend macadamias into a fine meal.

Add remaining ingredients & process on high until you have a fine crumb like mixture.

Press into donut pan, or shape into balls and use hands to mold into donut shape using your finger to create donut ‘hole’.

Set in freezer for 20 minutes then remove carefully from tray.

For the choc icing:

Ingredients:

1 cup coconut oil
1 1/2 cups raw cacao
2/3 cup maple syrup
1/2 tsp vanilla powder

Method:

Add hot water into bowl

Top with small bowl, add coconut oil & then begin melting coconut oil by whisking until melted

Add remaining ingredients until you have a smooth glossy mixture.

Use to glaze donuts then add your favourite toppings.
