Ravishing Recipe – Salmon and Broccoli Filos

A tasty way to get the family to eat more fish 🙂 I once had a doctor tell me this was the ONLY way he could get his kids to eat Broccoli! 🙂

You will need:
Olive oil spray
2 heads broccoli
2 medium potatoes, peeled
1 quantity white sauce
2 tablespoons tomato paste
2 x 415g cans pink salmon, canned in water
2 tablespoons lemon juice
1 teaspoon lemon pepper
Freshly ground sea salt & black pepper
24 sheets filo pastry

Pre-heat the oven to 200ºC and lightly spray a baking tray with olive oil
Cut broccoli into small florets and potato into small cubes and steam until just tender
Make and add white sauce (see below)
Fold in tomato paste, drained salmon, lemon juice, cooked broccoli, potato and seasonings
Take 2 sheets of filo and fold in half to make a square
Place a twelfth of the salmon mixture on one corner of pastry and roll up into a parcel
Repeat with remaining filo and salmon mixture until you have 12 parcels
Place on baking tray and spray with olive oil
Bake for 30-45 minutes or until golden brown

To make white sauce:

You will need:
1 x 375ml can low-fat evaporated milk
¾ cup skim milk
3 tablespoons gluten free cornflour
Freshly ground sea salt & black pepper
Grated nutmeg (optional)

Place evaporated milk and most of the skim milk into a saucepan
Mix cornflour with the remaining skim milk until free of all lumps, add to saucepan stirring thoroughly into milk
Bring to boil and stir constantly, season to taste
As sauce thickens, remove from heat
If the sauce is not used immediately, it may be necessary to add a little more skim milk (or water) before use, as it thickens more whilst cooling
