Peanut Butter and Chocolate Cake

This cake is a great example of how to make all those yummy things you adore, just a little, or a lot, healthier by being a little innovative, creative and experimental. The whole goal of permanent lifestyle change is to make it SUSTAINABLE 🙂

Unless something is ENJOYABLE, it is unlikely to last….

So….here you go 🙂 Just another example to add to the Toolbox! Enjoy! ox

Cake Ingredients:

2 1/2 cups wholemeal flour
2 cups coconut sugar
3/4 cup cocoa powder
1/2 cup peanut butter
2 tsp baking soda
1 tsp salt
2 cups water
2 tsp vanilla extract
2/3 cup melted coconut oil
1 tsp apple cider vinegar

Frosting Ingredients:

1 tub of Toffuti Cream Cheese
1 cup icing sugar
1/2 cup peanut butter
1 tsp vanilla extract

Directions:

-Preheat oven to 180 degrees Celsius

-Add all cake ingredients to a large mixing bowl and mix with beaters until smooth.

-Pour into a greased springform cake pan and bake in oven for 35-40 mins or until toothpick comes out dry.

-For icing, mix ingredients with beaters until smooth. Once cake is cooled, spread mixture on top of cake.
