Lentil Love

I’m not sure about you, but in the cool winter months, I tend to crave loads of slow cooked delicious yumminess, and as you may know, recently it’s been A LOT about LAMB and other meaty, hearty meals!
Just recently however, my body has been guiding me to lentils, and beans, and all manner of legumes : think chickpeas, butter beans, kidney beans and more!
All those yummy, mushy, gorgeously nourishing treats!
In particular, a dish by MasterChef Australia winner, Billie, made me absolutely DROOL at the mouth for some good old mushy peas!!! Did you see it??

Anyway, I wanted to share the Lentil Love with you and show you a few recipes that I myself am looking to try in the next little while 🙂
Again, many of these are the spunky Jamie Oliver’s as I truly DO love his style of cooking!
There are MANY reasons to LOVE lentils, aside for the fact they taste DELICIOUS, and just SOME of these are :
-Ethical & environmentally friendly 🙂
-High in Fibre – so they are good for the HEART (help to reduce cholesterol and blood pressure); good for the bowels (keeps us regular!); good for satiety (filling us up so we are more satisfied and eat LESS); good for blood sugar control (great for diabetics and keeping our energy and sugar levels stable)
-High in Protein – they are a great source of non-animal protein. Coupled with other grains, seeds or nuts, they can offer the full-complement of essential amino-acids we need to create and maintain healthy bodies and immune systems
-Loaded with minerals – these mighty members of the legume family contain 7 important minerals including iron, magnesium and potassium
-Good source of B Vitamins – these are our energy-giving vitamins and we need a daily supply of these as they are water soluble and so excreted
