I’m so super excited and PUMPED to bring you the recipe for these babies as, currently, they are NOT to be found ANYWHERE else on the interwebs! 🙂
The reason being is that they are the incredible creation (just one of MANY!) of one of my greatest friends who is incredibly humble, and otherwise occupied!
I keep asking her (as do MANY others!) to start her own food blog or recipe book, yet it remains that she enjoys cooking and creating out of pure recreation and the idea of it becoming “work” is too sad to consider!
Anywho, never fear, I have pledged to feature MANY more of her delicious creations HERE so that you may continue to benefit from her skill, genius and LOVE 🙂
These AMAZING Healthy, Choc-Raspberry tarts are guaranteed to satisfy the chocaholic in anyone as well as delivering a LOAD of goodness and a lasting energy boost.
Based on medjool dates, raw nuts, coconut cream and cacao, these tarts are bursting with minerals such as potassium and magnesium, are a good source of protein, a healthy dose of fibre, a sustaining release of energy & a wonderful supplier of cell-nourishing fats 🙂
You can DEFINITELY snack on these GUILT-FREE knowing they are delivering nothing but GOODNESS into your body!
Ok, now for the WHAT and HOW 🙂
6 medjool dates
1 cup of raw nuts (almonds/cashews/walnuts/or a mix)
1 tablespoon of cacao powder
200g dark Organic Chocolate
1 cup of coconut cream
1 tsp vanilla
Place nuts and dates in a food processor & process until crumbs form
Add cacao and process until sticks together
Press into mini silicon tart moulds OR mini muffin tins lined with paper cases
Chill in fridge whilst preparing the filling
Melt the chocolate and then stir in the coconut cream & vanilla
It will firm up slightly to form a ganache
Spoon into chilled bases
Top with fresh or frozen raspberries
Chill further until set then ENJOY with GUILT-FREE GLEE!!!!
