I’m not sure about you, but to me, this could quite possibly be one of the GREATEST inventions EVER….!!

A HEALTHY DONUT!!!

You may recall that I am a donut-a-holic from WAY back! So when I stumbled across these babies in my Insta feed I just KNEW I had to do my service and share them with you! 🙂

Miss @Cacaonuts of Insta world has an entire feed of mouth-watering, vegan, healthy eats so I highly recommend you get in there and check her out!! Quite honestly sometimes I am TRULY astounded at the genius and clever-ness of so many Healthy Foodies out there!

Back in the day when I was changing my lifestyle (from Couch Potato to Miss Health & Happiness!) I absolutely HAD to fill my experience with healthy recipes like these, otherwise I would NEVER have stuck to my journey and thus never have achieved my ultimate aspiration….

To live a happy, healthy life (AND look great!) ;p 

So I do hope that by sharing recipes like this one with you, that I continue to inspire and re-fuel any waning motivation or excitement on your Healthy Lifestyle Journey.

Freshly Baked Healthy Vegan Donuts

Donut Ingredients:

  • 1 tsp apple cider vinegar
  • 3/4 cup coconut milk
  • 1/3 cup raw coconut sugar
  • 3 tbs + 1 tbs coconut oil
  • 1 tsp pure vanilla extract
  • 1 tbs mesquite powder
  • 1 tbs lucuma powder
  • 1 cup spelt flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp himalayan salt

Raw Chocolate Glaze:

  • 1/2 cup coconut oil, melted
  • 1/2 cup raw cacao powder
  • 1 tbs carob powder
  • 1/4 cup raw coconut nectar

Method:

Preheat oven to 170c and grease a donut pan with 1 tbs coconut oil.

Whisk together the apple cider vinigar and coconut milk in a bowl and let it for 5 mins, then mix in the remainder coconut oil and vanilla.

In a separate bowl mix together the mesquite, lucuma, spelt flour, baking powder, sugar & salt.

Add dry ingredients to wet and stir until combined with no lumps.

Pour mixture into your greased donut pan and bake for 15 minutes.

Allow to cool in the pan before removing.

To make the glaze, whisk all ingredients until smooth.

Let sit a little while to thicken before glazing donuts.
