I’m not sure about you, but pancakes are one of my ALL TIME favourite YUMMY foods! 🙂
I just ADORE them and over the years I learned, and grew to LOVE, increasingly healthier versions of these babies 🙂
I have shared many times my famous Strawberry, Kiwi, Banana pancakes which are absolutely AMAZE (if you want this recipe email me on [email protected] and I’ll send it to you), but today I am sharing with you some INCREDIBLE power packed beauties that captured my attention on Instagram…
@donnalambourne is a fellow healthy food and lifestyle fanatic who has the same idea as me…. Food (and fitness!) must be FUN, attractive, desirable and DELICIOUS! No boring, bland, same-old, yawn-worthy, saw-dust sustenance!

I love this recipe for SO many reasons, (I mean, seriously they LOOK AMAZING don’t they?!?!), but some of the TOP factors making it a winner in my books are:
– GREENS are GOLD in the nutrition world! Blood cleansing, alkalising, mineral-dense, power-packed and all round AMAZE….. They really are the unsung hero’s in the realm of true nourishment. A day for me without greens is a sad one….. So anything that incorporates greens in a creative, delicious and ingenius way earns my respect AND curiosity 🙂
– BERRIES are the anti-wrinkle hero’s of all the fruits and veg! They come up winners in any anti-ageing competition and are a HIGHLY recommended daily inclusion for all my VIPs… You could easily use raspberries or blueberries in place of strawberries, or even go ALL out and have a mix 🙂
– RAISINS are concentrated sources of all-manner of anti-oxidants, and one often unknown super power of raisins is their BONE-LOVING Boron content….(***FYI Boron is a trace mineral required to convert estrogen and vitamin D to their most active forms (17-beta-estradiol and 1,25-(OH)2D3 respectively)…..***) Studies have shown that boron provides protection against osteoporosis and reproduces many of the positive effects of estrogen therapy in postmenopausal women. (thanks WHFoods for this info!)
– OATS are a wonderful source of many health-giving properties, but I especially love their blood-sugar stabilising effects, their ability to reduce blood-cholesterol levels, their selenium content and their YUMMY creamy flavour and texture…. I seriously think oats are a severely overlooked super food and I will always sing their praises….Making “flour” from oats is becoming a popular (and clever!) alternative to nutrient depleted white wheat flour so enjoy the difference they offer in this, and other, recipes 🙂
-There is SO much more to say about why I love this recipe but one of the other things I ADORE about it, is its SIMPLICITY…. Minimal ingredients (no additives, chemicals, super-dooper-whiz-bang-scientific-sounding stuff!), minimal effort, minimal time! YES! YES! YES! 🙂
So without further ado, here are the ever so casually shared ingredients and method :
-about 1/2 cup of oats
-a massive handful of spinach
-half a banana
-2 egg whites
-about 1/4 cup water
Mix all ingredients together in a blender, then just throw some raisins and chopped up strawberries into the pancake while its cooking. So simple!
From Donna: I cook them in a little round metal ring meant for cooking eggs in, in a frying pan for a couple of minutes. You can make them bigger if you like and have them as larger pancakes or roll them into pancake wraps…
Serve on a puddle of fat free natural yoghurt, topped with crushed fresh strawberries mixed with a little pure honey….
