I am SOOOOOO excited to bring you today’s recipe! 🙂 Yet another fantastic Instagram buddy, @feelgoodfoodie! All the recipes I have glanced at are ridiculously CLEAN and LOADED with body, mind and soul FEEL good properties 🙂

This little baby is especially fantastic as it is JAM PACKED with Vitamin C – a powerful anti-oxidant that nourishes, revitalises and boosts our immune system AND an interesting little fact, provided by @feelgoodfoodie is that Cranberries are great for oral health! 🙂 Pro-anthocyanidins in Cranberries prevent bacteria from binding to teeth and are also known to protect against cancer and cardiovascular disease. Preliminary studies have also shown positive effects on depression, vision and blood sugar control… WOW amazing… Food really is thy medicine! 🙂

INGREDIENTS:

– 2 c oat “flour” (you can make this by processing whole oats to desired texture)
– 1 1/2 tsp baking powder
– 1/2 tsp baking soda
– 1/2 tsp salt
– 3/4 cup Greek Yogurt
– 1 c coconut sugar
– 1 egg
– 3/4 c orange juice
– 1 tbsp orange zest
– 1 1/2 c fresh cranberries
– 1/2 c chopped pecans

METHOD:

– Whisk together oat flour, baking powder, baking soda & salt

– In a separate bowl, whisk together greek yogurt, sugar, egg & orange juice

– Combine the two mixtures, then stir in the orange zest, cranberries & pecans

– Scrape into a greased loaf pan & bake at 350ºF/180ºC for 1 hour or until toothpick inserted in center comes out clean

    This looks like a wonderful recipe. Just wondering what coconut sugar is…. Do you buy it or make it with sugar and coconut???? Cheers lesley

      You can buy coconut sugar from a local health food or organic store 🙂

    Hey Gorgeous!
    I LOVE cranberries, and up until last christmas cooul get frozen
    ones at Woolies/Coles. Haven’t seen them for 2 years now….
    Where on earth have you located FRESH ones? Have a great
    recipe for cran-Jalapeno “sause”/”salsa I created about 5-6 years ago.
    Will send it to you. Hope you like it hot, or warm!
