Carrot Cake Muffin Top

Today’s FABULOUS and CLEAN recipe comes to you from an Instagram sensation SammyBFit. These Carrot Cake Muffintops perfectly demonstrate how you can enjoy delicious food whilst being good to your body, mind and soul 🙂 No need for guilt or feeling BLAH afterwards!

Great for on the go! So easy to make and low in calories and fat! I topped mine with my Strawberry Cashew Cream Cheese Dip. Absolutely delicious!

What you will need:

1/2 cup whole wheat flour
1/2 cup quick oats
1/4 cup honey
1 tbs flax meal
1/2 tsp ginger
1 tsp cinnamon
Pinch of cloves
Pinch of salt
1/2 tsp baking soda
1/2 tsp baking powder
1/2 very ripe banana
1/2 cup unsweetened almond milk
1 tsp vanilla extract
1 cup freshly grated carrots
1/4 cup chopped walnuts


Place all dry ingredients into a large bowl and mix very well. Do the same with the wet ingredients. Be sure to mash the banana very well. Slowly combine the wet ingredients to the dry ingredients and mix thoroughly!

In a greased Muffintop pan, scoop 2 tbs of batter into each well. Bake at 350 degrees for 10 minutes. Remove from oven and allow to cool.
