ENOUGH ebook v1.0

Written by Bridget on . Posted in Food and Health Education

I have created this book to be a catalyst for the change within that takes you from feeling all sorts of wrong, to finally feeling at home within yourself.

To finally being your own best friend.

To really learning how to be kind, compassionate, understanding, accepting, patient, supportive, encouraging, forgiving and unconditionally loving towards yourself.

THIS is the most important and, for some of us, the most difficult journey to master.

Without this solid foundation of ENOUGH-ness, we find ourselves forever circling around the same old patterns, beliefs, fears, distractions, addictions and cycles of on-off, on-off, good-bad, right-wrong.

It’s time to finally say ENOUGH and to know that the true freedom, confidence, health, energy and happiness you crave IS just a choice and mind-set shift away.

It’s no where out there, and actually right here, now, within.

When we really commit to ourselves and to being our own best friend, everything shifts.

We are taught in society that having what we want requires discipline, sacrifice, hard work and relentless hustling. But the truth is that being aligned and expressing our true selves is the catalyst for flowing into our greatest life, happiness, health, body, relationship/s, success and so much more.

Much of what I’ve said thus far might seem cliche, but I swear to you that these truths I know with every cell of my being.

Decades of professional observation, personal experience and endless research, reading, learning, exploring, questioning, coaching and mentoring has landed me here.

And I hope to save you the decades of struggling and searching.

I really want you to know, feel and embody ENOUGH by the time you finish this book.

I want you to BE at peace.

To live your BEST, HAPPIEST and HEALTHIEST life NOW.

I don’t want you to waste your precious life struggling, searching, feeling incomplete and broken.

I don’t want you to jump from diet to diet; program to program; bright shiny object to bright shiny object.

Its time to say:

ENOUGH to dieting

ENOUGH to self-hate

ENOUGH to hating your body

ENOUGH to struggling

ENOUGH to stressing

ENOUGH to trying to do it someone else’s way

ENOUGH to not feeling ENOUGH!

Are you ready to FEEL, KNOW and LIVE this?

Are you ready to embark upon a life of greater and always increasing ease, joy and flow?

I’m SO ready to share this with you!

Tahini Sauce

Written by Bridget on . Posted in Ravishing Recipes

This is another highly valued addition to my weekly meal plan that I discovered whilst exploring my little Veggo stint. I serve it with my Sweet potato, Quinoa and Black Bean burgers

I think it is absolutely delicious and OH SO SATISFYING!

Additionally tahini is LOADED with healthy fats; rich in minerals including calcium, magnesium and potassium; a great source of protein; and high in certain B vitamins and Vitamin E!

So you see, this is actually a SUPER food recipe disguised in a “this tastes too good to be healthy” result!

It’s really easy to make and I simply mix it up in one 500ml “Ball” jar.

It does take a little bit of muscle so keep at the stirring to achieve a super creamy, smooth texture! You can obviously adjust the quantity of water to suit your most preferred consistency

  • 2/3 cup unhulled tahini
  • 1/3 cup freshly squeezed lemon juice
  • 1 tsp mustard
  • 1/2- 2/3 cup filtered water
  • pinch himalayan sea salt

  • Simply add the tahini, mustard and lemon juice to your desired mixing medium (I use the 500ml “Ball” jar) and stir to combine.
  • Then add small amounts of water, mixing each bit in before adding more, until you achieve your desired end result.
  • Season with the salt
  • I store this is the jar I make it in with an air-tight lid for up to a week. Any extra I pop into ice-cube trays for accessing any other time!

ENJOY! Let me know if you make this 🙂

Sweet potato, Quinoa and Black Bean burgers

The best vegan burger you've ever eaten

Image: by Minimalist Baker– original recipe here

Some of you who follow me on the socials know that I’ve been exploring the “plant-based” life quite intensely lately, predominantly due to some health issues that I’ve been needing to follow a specific protocol for.

If you know me, you know I LOVE meat!

Usually I digest it very well and I do believe that my particular constitution, at this stage of my life, does well on it.

However, there are times when back off the animal protein is necessary and beneficial and so this sent me on the hunt for that satisfying “I’ve eaten feeling” that I usually rely on animal protein for.

I am happy to report that I have FOUND the vegan burger of the century!!

This recipe is SO good I’ve made it a few times already and know it will be an ongoing regular in my meal plan moving forward!

In my exploration I did make a few other vegetarian burgers and patties, but sadly they were not “make-again” material, and were quite the ordeal to make!

I like easy, simple, fast! Anything that is too much fuss, especially if the end result is NOT worth it, is DITCHED pronto!

I promise you, these are worth the effort! Which actually is not too much at all!

Anywho, here are the deets!

The original recipe for these OH-SO-GOOD plant-based burgers is from Minimalist Baker which is a HAVEN of plant-based recipes, so be sure to check it out!

If you do make these, be sure to let me know– TAG me in Instagram or on Facebook! @newleafnutrition on both platforms 🙂

I’d LOVE to see your piccies!

  • 2 cups mashed sweet potato (~2 large sweet potatoes // organic when possible)
  • 1 tin cooked salted black beans (rinsed and well drained // if unsalted, add more salt to the burgers)
  • 1 – 1 1/2 cups cooked brown rice/cooked quinoa- I use quinoa – 1 cup
  • 1/2 cup walnut or pecan meal (or very finely chopped) – I use flaxseed meal
  • 1/2 cup finely diced green onion (one time I made these I had no green/spring onion, so I used brown onion; another time I had NO onion and they were still the BOMB!)
  • 2 1/2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 tsp each salt and pepper (to taste)

The original recipe also lists:

  • 1/4 tsp chipotle powder (optional)
  • 1 Tbsp brown sugar (optional // for added sweetness)

I’ve never used either of these ingredients when making them, so it’s up to you if you do or not!

Also, they list:

FOR SERVING (optional)

(see the original recipe here for their method- below are my adjustments- I have also added a step by step video demonstration on my Instagram Story Highlights)

  1. I always keep the skin on sweet potato and potatoes in general- thats where all the fibre is!2. I make extra large patties so I get about 6-8 patties from one batch
    3. I serve these with salad and veggies as well as this Tahini Sauce, however you can check the original recipe for how they suggest to serve

*For quinoa: rinse 1 cup quinoa and add to a saucepan over medium heat. Sauté in a bit of olive oil for 1-2 minutes (I skip this and just add the water), then add 2 cups water and bring to a boil. Reduce heat to simmer, cover and continue cooking for about 15 minutes or until tender and fluffy and the water is absorbed.
*Inspired by the Black Bean Burger at Beer Kitchen
